I am getting the same issue, every game I play I run on full settings with no trouble, above 50fps. This game ran fine in the beta on premium settings, the only change I've had is I changed the monitor to an lcd at a lower resolution, from 1600x1200 on a dell d1025ht 19'' to 1280x1024 Envision 19''
My Specs are entirely reasonable for this game:
CPU: 2.8 ghz pentium D
RAM: 1.5gb
Video Card: MSI 8600GT 512mb

So sorry you guys are having this trouble. The patch seems to have worked for some people over on the Valve thread but not others. We are working on it.

Ehh, that card is kind of bad. 8600GT < 7900GS

It normally ran at about 30fps but after the update it runs like the beta again.
Specs:
Geforce 8400GS 512MB
CPU: Intel Core 2 Duo E4500
RAM: 2GB DDR2
oh and Gravs DDR3200 would be DDR400 and PC3200.

Could you take e.g. Fraps and run a benchmark? I'd like to know what your average fps are. I will be really, really annoyed if you get more than me, not because I have a better computer, but because I want to Audiosurf to run as smoothly as possible...

OK - I've done some testing and got the following results on The Whistle Song by DJ Aligator (yes, it's spelled with one "L" =) Project.
FSAA 8x or none makes as good as no difference at all - in one case turning it off even worsened the situation. 0_o
I tried to catch all the colored blocks not caring for the score because the "hit effect" slows down the performance as well.
My results are as follows:

Core2Duo E6600 @ 2.2 GHz

Could someone run a similar benchmark with Fraps? I'm especially interested in the Premium 8x FSAA performance since that's how I want to play the game, considering my PC is still in like the top 5% according to e.g. the Steam Survey. 53 fps on average with a minimum of 32 fps is not what I'm expecting from a game about collecting colored blocks - I get better performance in Supreme Commander, where there are hundreds of units and massive battles with impressive explosions.
Run a 60 second benchmark from the beginning of the song (after you start moving your ship, not when the camera zooms in).

P.S. I tried running the game in single-core mode since some programs display very low performance while running on dual cores but I got exactly the same results. Hence single-core or even quadruple core CPUs should make no difference whatsoever.

Just Enhanced no AA though as Beta doesnt support!

Tests done!:
Using your bench track I got this:

Frames: 2934 - Time: 58986ms - Avg: 49.740 - Min: 27 - Max: 63
These results are at 1920x1200 though, so obviously gets less than you.
To compare Beta with 'Gold' version, this is what I got with 60 secs of a fast track:
Beta:
2008-02-16 18:20:15 - QuestViewer
Frames: 3533 - Time: 60000ms - Avg: 58.883 - Min: 51 - Max: 63
Gold:
2008-02-16 18:23:03 - QuestViewer
Frames: 2920 - Time: 60000ms - Avg: 48.666 - Min: 32 - Max: 63
Quite clearly the Gold is far worse, and you can REALLY feel it in game, it makes Ninja Mono so much harder.
On a passing note, is the Gold Version harder to score points on, I've noticed the shuriken penalty is up, but are there less points to be gained in total, or is it the lag causing me to play worse

Benchmarks done here too:
Using "The Beast and Dragon Adored" by Spoon:
Beta: 54.8 FPS average, using Premium Graphics
Beta: 58.4 FPS avg using enhanced.
Beta: 58.3 FPS avg using normal.
Gold: 39.9 avg using premium, no AA
39.1 avg using premium 8xAA
36.1 avg using enhanced, no AA (?!)
46.2 avg using normal, no AA
45.7 avg using normal, 8xAA
so... it seems to have NOTHING to do with AA, and the Enhanced and Premium settings must have something in them that causes the chunkyness.

Most hotfixes were not applicable to my system but after installing the first one I got a HUGE performance boost in Audiosurf. I also installed the newest beta drivers (173.65):
